Microgreens are the seedlings of vegetables, herbs, grains, and flowers. At first glance they look similar to sprouts. However, microgreens consist of the stem, cotyledons, and first true leaves. Sprouts include the seed, roots, and very young stems and cotyledons.
Don't let their size fool you, microgreens are incredibly nutrious and delicious Microgreens are rich in essential nutrients. Some studies have shown microgreens will have up to 40 times the nutrient content compared to their mature counterparts.
